Tiramisu with Shaved Chocolate Serves 6 Equipment Ingredients Method Combine just the yolks of 3 eggs, one tablespoon of the cappuccino, ½ cup of sugar and 2 Tablespoons of Cognac. Beat for 3 or 4 minutes. Add 8 oz. mascarpone cheese and 7 oz. of fresh cream. Continue to beat until it is smooth and makes a ribbon when dripped from the mixture. In a second bowl combine the whites of the 3 eggs and a pinch of sugar. Beat until stiff peaks form. Gently fold the egg whites into the mascarpone mixture trying not to break down the air in the beaten eggs. Dip one side of the Lady Fingers into the remaining cappuccino and layer the bottom and sides of the serving dish. Spread the 7/8ths of the Mascarpone mixture into the dish. Apply a final layer of Lady Fingers over the top of the mixture and top with the remaining mascarpone. Finish by sprinkling shaved chocolate over it.
