Soup Bonne Femme

Equipment
Deep Cooking pot (enough for 2 quarts)

Ingredients
½ cup of Butter
4 medium leeks (split length wise and washed well then sliced fine crosswise)
6 medium potatoes cut in small cubes
1 quart of Chicken Broth
2 bay leaves
3-4 Sprig of Thyme
Salt and Pepper
Loaf of French Bread
Cup of Heavy Cream

Method
In the pot, brown the leeks very lightly in the butter. Add the chicken broth, potatoes, bay leaf and thyme. Salt and pepper to taste.

Bring to a boil then simmer for thirty to forty minutes. Make sure the potatoes are tender.

Serve it immediately.

This soup is delicious and so very easy to make. I like to serve it with a touch of heavy cream in it and with a crusty French bread.
