Quiches a La Michelle
Recipe for 12 individual Quiches.
Equipment
1 regular muffin pan for 12.
Ingredients
Pastry Dough.
1 Cup of Flour.
_ Cup of soft Butter.
A few drops of Cold Water.
Filling
4 Fresh Eggs, Cracked in a bowl.
4 Cups of Half and Half.
_ Cup of Boiled Ham, Chopped.
Three Spring Onions (Scallions), Chopped fine.
_ Cup of Swiss Cheese, Chopped.
Black Pepper to Taste.
Method
Filling
Mix the eggs, half and half and season with pepper to your
taste, put to one side. Mix the ham, scallions and Swiss cheese
in your mixing bowl.
Dough
Mix the flour and soft butter in your mixer until the dough
is formed into a ball. Dampen the dough ball with a few drops
of cold water. Flour your rolling area and rollout the dough
to a _" thickness. Using your pastry cutter, stamp out 12
pieces of dough. Lightly butter the inside of the forms of
the muffin tin. Roll out the individual pieces to a size and
line the individual forms in the muffin tin.
Put a teaspoon full of the ham, scallion and Swiss cheese
mixture in the bottom of each form and then fill with the
premixed egg and half and half liquid.
Fill the forms with the egg mixture.
Pop in a preheated 375degree oven for 20 to 30 minutes, until
the pastry is light brown.
Voila! Quiche a La Michelle.
